Building Roumo from scratch
Hi! Roumo started with one question: why can't you get a proper roujiamo in Kraków? Instead of waiting for someone else to do it, I decided to do it myself and show every step on TikTok.
I started with 20,000 zł. I looked for a bakery that could bake buns like in Xi'an, checked several locations, nearly signed one lease (good thing I didn't) and finally found a kiosk at Królewska 20. No running water, but plenty of character.
Now Roumo is open and you can find out what a Chinese burger tastes like.
肉夹馍ròu jiā mó, “meat in a bun”
What is roujiamo?
Street food from Shaanxi province, iconic in the city of Xi'an. Meat braised for hours in spiced broth, chopped on a board and stuffed into a flat bun baked until crispy.
- Baijimo bun
- Crispy at the edges, soft inside.
- Braised meat
- Star anise, cinnamon, ginger and soy sauce.
- Chopped on the board
- Cut with a cleaver right before serving.
- Your way
- Mild or hot, with or without extras.
How Roumo was built
The first bun
The first sample of bread for roujiamo. I chose fresh bread from the oven, even if it is the harder way.
Bakery chosen
We have a bakery that bakes our buns. Crispy outside, soft inside.
Looking for a place
Several locations, one almost signed lease and the decision to wait for the right spot.
Królewska 20
We have a kiosk! A 20,000 zł opening budget and every expense shown on TikTok.
Water and Sanepid
Installing water in a kiosk with no running water, then the health inspection. Passed.
Opening
On opening day there was no fixed price. Everyone decided what the Chinese burger was worth.
